## How provisioning actually works
Provisioning starts with a preference sheet, which is a plain document rather than a menu. It asks what you drink in the morning, what your children will actually eat, who has an allergy or an intolerance, whether anyone is vegetarian, what you do not want to see on a table, and whether lunch should arrive as a long shared spread or as courses.

From that we build the menu with the chef or the caterer, and the shopping is done in Malta on the morning of your charter — the fish market at Marsaxlokk on the right day, Maltese ftira and gbejniet from a local baker, Sicilian produce that arrives on the ferry. Nothing is pre-packed days ahead, which is the difference between charter food that guests remember and charter food they photograph and then leave.

On crewed weekly charters provisioning is funded through the Advance Provisioning Allowance and reconciled with receipts, so you can see exactly what was bought. On day charters it is a fixed per-guest price agreed in advance: €95 for a generous mezze spread, €125 for a mid-range menu with grilled fish, up to €185 for a plated three-course lunch with wine pairings from the chef.

Confirm catering seventy-two hours before departure. Later than that we can usually still do something good, but the market choice narrows and specific requests — a particular cut, a birthday cake in a particular flavour, a specific champagne — become harder to guarantee.

## When each piece needs confirming
1. **Yacht and date — as early as possible** — Four to eight weeks for July and August, one to two weeks in the shoulder season, three to six months for a peak-week crewed or superyacht charter.
2. **Route and itinerary — two weeks before** — Enough time for the skipper to plan berths, permits where needed and any overnight pontoon slot in Gozo.
3. **Catering and drinks — 72 hours before** — The window in which the chef can still shop specifically for you and guarantee particular requests.
4. **Water toys — as early as possible** — Availability in peak season is genuinely limited, and jet skis require an instructor to be scheduled.
5. **Transfers — 24 hours before** — Enough for the driver to be assigned and their number sent to you the night before.
6. **Celebration details — 48 hours before** — Cake, flowers, signage and photography all need a day of notice to be done properly rather than approximately.
